There's no need to introduce these muffins with some long back story. These are great little protein snacks that are quick and easy to make.
Vegan Flourless Banana Muffins
1/2 cup Quick Oats
3/4 tsp Baking Powder
1/8 tsp Baking Soda
1/4 tsp Salt
1 can White Beans (rinse thoroughly and pat dry)
1 medium Overripe Banana
1/4 cup Peanut Butter
1/4 cup Honey
2 tsp Vanilla Extract
Preheat oven to 350˚
Throw everything into a food processor and combine until smooth. Scrape down the sides and pulse a few more times if necessary.
Optional: Add a pinch of cinnamon or stir in 1/4 cup chocolate chips, walnuts, raisins, or coconut.
Pour into about 8 muffins cups.
Bake for 20 minutes.
Cool and consume, refrigerate, or freeze.
Note: Muffins will be small and dense, not big and fluffy.

P.S. - I don't need an hour lecture on how honey isn't vegan. I've been down that road with far too many people. If you're vegan and don't eat honey, just use pure maple syrup and let me live my life.
